Normally, we wouldn't post on Pulses day, but this time we couldn’t resist giving a shoutout to the unsung hero of our everyday meals - Dal! Here is the recipe for Dal Makhni: Ingredients: 1 cup black lentils (whole urad dal) 1/4 cup red kidney beans (rajma)... 1 onion, finely chopped 2 tomatoes, finely chopped 2 cloves garlic, minced 1-inch piece of ginger, minced 1 green chili, chopped (optional) 1/2 teaspoon cumin seeds 1/2 teaspoon turmeric powder 1 teaspoon garam masala 1 teaspoon coriander powder 1/2 teaspoon red chili powder (adjust to taste) 2 tablespoons butter or ghee Salt to taste Water Fresh cream for garnish (optional) Chopped coriander leaves for garnish Instructions: Step 1: Rinse the black lentils and kidney beans thoroughly. Soak them together in water for at least 6 hours or overnight. Drain the soaked lentils and beans, rinse again, and transfer them to a microwave-safe bowl. Step 2: Add enough water to cover the lentils and beans by about an inch. Microwave on high power mode for 20-25 minutes or until they are cooked through. Stir halfway through the cooking time. Step 3: In another microwave-safe bowl, add butter or ghee along with chopped onions, garlic, ginger, green chili, and cumin seeds. Microwave on high power mode for 3-4 minutes until the onions are soft. Step 4: Add chopped tomatoes, turmeric powder, garam masala, coriander powder, red chili powder, and salt to the onion mixture. Microwave on high power mode for another 5-6 minutes until the tomatoes are soft and the mixture thickens. Step 5: Once the lentils and beans are cooked, add them to the tomato mixture along with some water (as needed for desired consistency). Microwave on high power mode for another 8-10 minutes, stirring occasionally. Serve hot, garnished with a swirl of fresh cream (if using) and chopped coriander leaves.
